Food + Wine Pairing: Rapport Chardonnay with Minted Pea and Parmesan Crostini

We love this Minted Pea and Parmesan Crostini! And even better - it’s easy to prepare and you’ll love how it pairs with our 2018 Chardonnay. This is a great light-bite to serve at home or even at a wine tasting dinner party. We’ve consumed many bottles making and eating this recipe. Enjoy!
Minted Pea and Parmesan Crostini
THE INGREDIENTS
12 slices of baguette bread
1/2 garlic clove
1 cup fresh or frozen peas, thawed
Kosher salt
2 tablespoons extra-virgin olive oil
Shaved Parmesan
Torn mint
Cherry tomatoes
A few drops of balsamic vinegar
THE PREPARATION
Grill or toast bread slices and rub with garlic clove. Blanch peas in a large saucepan of boiling salted water until just tender, about 2 minutes for fresh peas and 1 minute for frozen. Drain peas and transfer to a bowl. Season with salt and olive oil and mash with the back of a fork. Spread about 1 tablespoon mixture over each toast. Garnish with shaved Parmesan, torn mint, drops of balsamic vinegar, and halved cherry tomato.

The site consistently produces a lean, crisp expression of Chardonnay that is more closely associated in style to that of its European counterparts. With little new French oak to hold the fruit back, the wine shows more of the mineral driven flavors of our vineyard.
